Giada’s recipe

Between 10-1 most days, I ‘fish’ around in the freezer looking for something for dinner. I just happen to find a package of tilapia which is a tasty white fish. If you haven’t tried it and aren’t crazy about fishy, fish, this is a good choice. I pulled down a few cookbooks as I am trying to utilize my vast library a bit more and neither Rocco or Martha had tilapia recipes. Then I remembered that Giada (ja-da) DeLaurentiis did in the cookbook that I just received as a Christmas gift. So I’m trying it tonight. It calls for chopped up sardines (Bri happened to have a can-I’m still up in the air about if I really want to use some, maybe a smidgen). The rest of the ingredients are citrusy.

Update-Couldn’t do the anchovies-too weird looking. They were for the sauce. Giada also wanted you to fry the fish. I baked it and poured the sauce over top. I think next time I would reserve some of the sauce for serving. Also had baby carrots and Couscous.

We’re looking to have snow squalls or showers in a few hours. Just when my fellas are headed home. I wanted to go look at vacuums for mom (I’m taking stock in the Bissell company as she seems to blow one out every two years). I also wanted to pop a few items up for sale on eBay as it’s been over a month since I’ve done so. I found a few things in the ‘storage’ that Sean received at gifts that he never opened. I will give him the money toward his loan payment. Seems that he (or us) have to start paying it back before he’s not even out of college. Doesn’t seem fair, but there’s that new twist-just paying on the interest of the loan. Not that it’s new I guess-we are doing the same thing with our H.E.L. (abbrev so appropriate).

I was flipping channels after our dinner fiasco last night and found the Critic Choice awards. Abigail Breslin from ‘Little Miss Sunshine’ received an award for ‘Best Young Actress’. The teen who played her brother won for ‘Best Young Actor’. The movie won a few more awards too.

So after church Sean wanted to go to a new Olive Garden down near Christiana, Delaware. When we got there it was mobbed and there was a hour to an hour and 45 minutes wait. Needless to say, we left. All the three other restaurants we tried were packed. It was cold as heck last night and we thought people would stay in their nice warm houses-wrong!  We finally went into a crowded place at 6:45 which was like diner. Some older man was in line and for some reason said; ‘women don’t want to cook anymore’. I thought that was totally uncalled for. What we had was fair-my turkey was dry around the edges. I have a whole turkey to cook down in the freezer and should get that out and make a yummy hot turkey sammie that I won’t let dry out. Is there any good restaurant food anymore?I’m still working on bags and boxes from the basement. I am going through gift wrap, bows, tags, etc. I got rid of a huge bag of squooshed bows, wrinkled wrap and tissue, you name it! I see a slight improvement.

Just playing with the paint shop pro again. I just love Abigail Breslin (Signs, Little Miss Sunshine), Dakota Fanning (I am Sam-favorite-War of the Worlds, Dreamer, Charlotte’s Web and she has a little sister just like her Elle!), Angus T. Jones (Two and a Half Men the tv show that I don’t watch too often, but he reminds me of my brother Ken at that age) and  new one to the list Jaden Smith (son of Will and Jada, though I haven’t seen his debut movie, he is just so dang cute in his interviews and his dad is from Philly). I made this collage to salute their cuteness. Everytime you see them on tv, like The Tonight Show, etc. they are just happy kids. I can’t believe Dakota is almost 13. If you haven’t seen any of their movies/show, you should!

I forgot Bindi Irwin, the late Steve Irwin’s charismatic daughter who is just amazing, but not sure if she will be a movie star. She’s popular on tv though.

Alton Brown kinda scares me…

I got ‘I’m Just Not Here for the Food-baking’ cookbook from Food Network’s Alton Brown for Christmas, at my request. I think Alton is pretty cool on his show and has a way with words and explaining things down to every minute detail. I knew he’d do the same thing with a baking book. Many people, Rachael Ray included (is she a bit overexposed these days-down to the Triscuit box?) are afraid of baking. Alton explains that baking is an ‘exact’ science. You can’t go around messing with how much butter you put in your batter as you will mess with the formula. Cooking is different-you can toss in a little more, say chili powder to your pot of chili and it will still be basically chili.
Alton suggests a few things that made me rethink the way I’ve been baking for over 30 years. For instance, you should really be weighing your ingredients instead of scooping them out of the flour jar, etc. He suggests getting a digital scale in your kitchen. He also aerates his flour with his food processor before he uses it in the recipe. I always skipped even sifting it, but he doesn’t like sifting-the food processor ‘fluffs up’ the flour. And did you know there are different mixing techniques? I really screwed up mixing the first time I used my KitchenAid when I decided to make muffins. I should have never used a mixer for muffin batter. I incorporated too much gas in the muffins and their lids fell flat.
I am learning many new things. Alton does include measuring we are all familiar with, but I am thinking about getting a scale now. There are oddles of new ideas in this book. If you like to bake and want to be more of a pro at it or even learn new techniques (like me), I’d invest in this excellent and informative book.
I guess I’m not really scared of Alton, I just need to try things in a new way.

JT’s Musicare Man of Year show

Thanks to Sean, I had a nice evening last night. When he came home from classes, he said he had read that James was going to be on PBS at 9. It didn’t take me long to realize it was probably the show honoring him from March of this year-Musicare’s Man of the Year award show to be exact. It was really a great program! Lots of musicians singing JT songs. JT looking so fine and modest in the audience in his dark suit and ice blue silk tie. Seeing the little 5 yr old Taylors-Rufus (I thought it was Logan) and Henry booging with their uncle Livingston on stage while dad got into ‘How Sweet it Is’. So this was a treat for me and I know what to ask for, the DVD for Christmas!

It’s a Wonderful Life

Jimmy Stewart from Indiana, Pa. played George Bailey the character who felt like everything he wanted to do got pushed aside. I loved this character and I think Jimmy was such a gentleman. It was just his voice that was a bit grating. I hope you’ve seen this move and if you can’t make out my phrase there, it says ‘Every time you hear a bell, an angel’s got his wings’ or something like that. : )

Ok, I agree with Barbara, Jimmy had a very memorable voice-maybe it was the people who tried to imitate him that made me think his voice was annoying. Shame on them! ; )

Bianca’s First CD!

Bianca Ryan’s first CD is out!! Remember she’s the young lady who won ‘America’s Got Talent’ back in August? I am thrilled for her (she’s from Philly too).
